Beets with Carmelized Onions and Feta

I'm re-posting this beet recipe cause it's worth it.


2 T. Cider Vinegar
1 tsp. Dijon Mustard
1/4 tsp. Pepper
3/4 tsp. Salt
2 T. Olive Oil
1 Medium Onion, sliced
1 lb Beets, cooked, peeled & sliced
1/3 C. Crumbled Feta
1 oz. Pine Nuts, toasted & coarsely chopped (omit if unavailable)

Wisk together vinegar, mustard, salt, pepper, then add 1/2 the oil in a slow stream, wisking till combined.

Cook onions in rest of oil over moderate heat, stir occasionally, till golden, 15-20 minutes. Add onions to dressing, then add beets and cheese and stir gently to combine. Sprinkle with pine nuts.
