Roasted Delicata Squash

This recipe comes to us from Kristine, who picks her share up at Sage Meadow in Clarion.

1 delicata squash
1 TBSP olive oil
2 TBSP melted butter
2 TBSP brown sugar
1/2 tsp chili powder
1/2 tsp smoked paprika
pinch salt
pinch red pepper flakes
Preheat oven to 350.  Wash squash, cut in half lengthwise and clean out seeds.  Cut 1/2 inch slices from each of the halves.  Mix all other ingredients into a runny paste.  Toss squash slices in the mixture.  Place slices on cookie sheet.  Cook for 10-15 minutes and then flip the slices over and cook for another 10-15 min until soft.  Adjust spice amounts per taste.
