Stuffed Patty Pan Squash

Stuffed Patty Pan Squash

I hollowed out the patty pans and filled with a mix I made of caramelized onion sauteed with fresh garlic, shiitake mushrooms, salt, and pepper.  Then I mixed this with a bag of Steam Fresh creamed spinach.  I stuffed the squash, put in a baking pan covered with foil and baked on 350 until done.  They were different sizes, so they were done at different times.  I just checked periodically.

I made an eggplant/squash/tomato saute with the tops and insides of the patty pans.
