Baked Zucchini Pie (Tutumov Boerag)

This recipe comes to us from Janice, who picks up her share at Sage Meadow in Clarion.

Tutumov Boerag (Baked Zucchini Pie)
4 med. sized zucchini
4 eggs
1 c. muenster cheese, grated
1/4 c. chopped parsley
1/2 c. flour
1 t. salt
1/8 t. pepper
4 T. butter

Wash zucchini thoroughly and grate them into a mixing bowl.  Sprinkle lightly with salt and set a side for 10-15 min.  Take a handful of zucchini and squeeze it to remove as much of the liquid as you can.  Continue until all the zucchini is drained.  Combine it with the rest of the ingredients except the butter.  Pour the mixture into a buttered baking dish and dot with butter.  Bake in 375 deg. oven for 45 min.  Serve hot.
