Sleek (Middle Eastern Dish)

This recipe comes to us from Susan, who picks her share up at Bryant St Market in Highland Park.

I made the kale into my version of sleek (Middle Eastern dish)

Soak one-half cup lentils for several hours.
Break 6 cups of kale into bite-sized pieces, discarding tough stems. 
Coarsely chop a large yellow onion 
Heat 2 tbsp olive oil in frying pan until rippling 
Add chopped onion and cook until brownish 
Add 1 cup of water with ½ tsp of vegetable soup base 
Drain and add lentils to boiling mixture, stir and cover for 5 min. 
Add the kale, stir and again cover for 5 minutes. 


 Test to see if kale is soft and lentils is firm but not hard. Serve.
