Fennel Apple Salad

This recipe comes to us from Laura, who picks her share up at Espresso A Mano in Lawrenceville.


1 Medium Fennel Bulb, finely sliced
2 Tbs. Fennel Fronds, coursely chopped
3 Celery Ribs, finely sliced
1 firm apple, finely sliced
1 whole young red onion, finely sliced
1 scallion, finely sliced
1/4 cup chopped parsley
1 Tbs. olive oil
Juice of Half a lemon
1 Tbs. apple cider vinegar
 salt and pepper to taste

 Toss all ingredients and enjoy! Serves about 4 as a side dish.
